Kid Caramulo

The tradition of flavor with a history

The Brotherhood Gourmet Goat and Sierra Caramulo wants to not only meet a goal to defend, honor and value the dissemination of the Goat Mountain Caramulo Gastronomic heritage, but also help to safeguard the development and diffusion of the Serra do Caramulo and the County of Tondela in a scenario of tourism development.

In this sense we strive for in the Caramulo mountains, our delicious kid is enjoyed not only ourselves but for all who visit us, accompanied by a good wine Dão.


Roasted lamb Caramulo Mountain


A kid from 3 to 5 Kg (without inwards)
6 cloves of garlic
1 bay leaves
1, 5 tablespoon paprika
1 bunch of parsley;
salt to taste
0.5 lt. white wine
6 tablespoons olive oil
2.5 tablespoon of lard.


It begins by cleaning the kid, remove the entrails and cut it into large chunks; barring with a gruel made with salt, crushed garlic, paprika, bay leaf, olive oil, and lard.

Place the pieces of lamb in a roasting pan clay Molelos black and join the bunch of parsley and a little white wine, should be well tempered one day to another.

It takes the hot wood oven and when the kid make half-baked, it begins to sprinkle with white wine (occasionally). The lamb should be well toasted.

Serve with roasted new potatoes, rice kids done with the entrails of the goat and sauteed greens.
